Mini Cheesy Onion Rings with Few Carbs
Go for Low Carb if you want extra servings: Approximate serving size: 4
What you need:

two big onions, quarter-inch slices
paprika, 1 teaspoon (or 1 cup) and almond flour, 1 cup
– 1/2 teaspoon of powdered garlic
For an extra kick, add 1/4 teaspoon of cayenne pepper.
2 big beaten eggs-Salt and pepper to taste
two cups of grated cheese (cheddar, mozzarella, or both)
Follow these steps:
1. Line a baking sheet with parchment paper and set your oven to 400°F, or 200°C.
2. Cut the onion pieces into thin discs.
In a shallow bowl, combine the almond flour, paprika, garlic powder, cayenne pepper, salt, and pepper.
4. Beat the eggs well in a separate shallow bowl.
Scatter the almond flour mixture over each onion disk after dipping them in the egg wash; let any excess egg wash to drop off.
Put the coated onion discs on the baking sheet that you made earlier, being sure to leave some space between each disc.
7. Evenly coat each disc with shredded cheese, being sure to scatter the cheese over the onions instead of letting it fall to the baking sheet.
Once the cheese begins to bubble and become a golden brown color, bake for another 12 to 15 minutes.

Substitute almond flour with low-carb flour of your choice if you’re short on time; however, since coconut flour is quite absorbent, you may need to use less of it than almond flour.
