For 6 tartlets of 10 cm diameter
Dough :
1 2/3 cups (250 g) flour
1 pinch of salt
2/3 cup (100 g) icing sugar
1 sachet of vanilla sugar
1/2 cup (125 g) butter at room temperature
1 egg yolk
3 to 4 tbsp. tablespoon of water
Almond cream
2/3 cup (160 g) butter at room temperature
3/4 cup (150 g) sugar
1 C. teaspoon of pure almond extract
3 eggs
1/4 cup 35% cream
1 1/2 cup (150 g) almond powder
4 tbsp. tablespoon of flour
