Chocolate Chip Biscotti

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large bowl, beat together the sugar and butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Stir in vanilla extract.
Gradually add the flour mixture to the butter mixture, stirring until just combined. Fold in the chocolate chips and optional nuts.
Divide the dough in half. On the prepared baking sheet, shape each half into a 9×2 inch log, spacing them at least 3 inches apart.
Bake for 25-30 minutes, or until the logs are light golden brown. Remove from the oven and cool on the baking sheet for about 10 minutes.
Transfer the logs to a cutting board. Using a serrated knife, cut diagonally into 1/2 inch thick slices. Place the slices cut side down on the baking sheet.
Bake for an additional 8-10 minutes on each side, or until the biscotti are crisp and golden.
Cool on a wire rack. Store in an airtight container.
