Classic Southern Pineapple Sunshine Cake

Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.

In a large bowl, whisk together flour, baking soda, and salt.

Add sugar, eggs, and crushed pineapple (with its juice) to the dry ingredients. Mix until well combined.

Stir in nuts, coconut, and vanilla extract if using.

Pour the batter into the prepared baking pan.

Bake for about 30 to 35 minutes, or until a toothpick inserted into the center comes out clean.

Allow the cake to cool completely in the pan on a wire rack.

For the frosting:

In a medium bowl, beat together the cream cheese and butter until smooth.

Gradually add powdered sugar, mixing until smooth. Stir in vanilla extract.

Spread frosting over the cooled cake. Sprinkle with additional nuts and coconut if desired.
