- Start by cooking the tomatoes and onion. Wash the red tomatoes thoroughly and place them in a pot with enough boiling water. Add the garlic clove and half of the onion. Cook for a few minutes or until the tomato skin easily detaches in pieces.
- Place the ground beef in a deep bowl and add half of the chicken bouillon, a pinch of salt, and a pinch of pepper. Mix until well combined with the beef. Finely chop the remaining onion and cilantro, which have been properly washed and cleaned.
- Add the freshly chopped vegetables, along with the cooked rice and egg, to the seasoned ground beef. Mix all these ingredients together until you have a homogeneous mixture.
- Once the meat is ready, start shaping the meatballs. Take a small amount of the mixture and place it in the palm of your hand. With the help of your other hand, form small spheres.
- Repeat this process until all the meat mixture has been used, and once the meatballs are ready, set them aside.
- Meanwhile, once the red tomatoes are cooked, prepare the chipotle sauce. In a blender, combine the tomatoes, garlic, onion, and chipotle pepper. Add a pinch of salt and the remaining half of the chicken bouillon powder. Add enough water and blend until you have a smooth sauce.
- Heat some oil in a pot and fry the sauce for a few minutes.
- After 5 minutes, add the meatballs to the chipotle broth and cook over medium heat for 15 minutes.
- After this time, your delicious meatballs in chipotle broth are ready to be enjoyed. You can adjust the spiciness by adding more or less chipotle. Serve with warm corn tortillas. Enjoy your meal!
