3 tablespoons unsalted butter

3 large sweet onions, thinly sliced

2 cloves garlic, minced

Salt and pepper, to taste

1 teaspoon thyme (fresh or dried)

2 tablespoons all-purpose flour

1/2 cup dry white wine

2 cups beef broth

1 cup chicken broth

6 slices day-old French bread or baguette, toasted

1 1/2 cups grated Gruyère cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped (for garnish)

Cooking spray

Directions:

Preheat oven to 400°F (200°C) and prepare a 9×13 inch baking dish with cooking spray.

In a large pan over medium heat, melt butter. Add onions, cooking until soft, sweet, and golden (about 15 minutes). Mix in garlic, salt, pepper, and thyme, cooking for another minute.

Sprinkle flour over onions, cook for a couple of minutes, then add wine. Simmer until reduced slightly, then add both broths and simmer for 10 more minutes.

Layer half the onion mix in the dish, top with bread slices, and sprinkle half the Gruyère and Parmesan. Repeat layers.

Bake uncovered for 20-25 minutes, until cheese is bubbly and golden. Let sit before serving and garnish with parsley.

Variations & Tips:

Swap beef broth for chicken or veggie broth if you prefer.

Try different cheeses like sharp cheddar or mozzarella for a new twist.

For a gluten-free version, use gluten-free bread.

Prepare ahead: Assemble a day in advance, cover, and refrigerate until ready to bake.

Short on time? Use store-bought caramelized onions for a quick fix.

This French Onion Soup Casserole is not just a dish; it’s a heartwarming embrace, proving that sometimes, the simplest ingredients can create the most memorable meals. So, dive into this casserole and let each bite comfort and delight you!
