Step 1: Prepare the Potatoes
1. Preheat your oven to 425°F (220°C).
2. Place the baby potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender, about 15 minutes.
3. Drain the potatoes and transfer them to a baking sheet.
4. Using the bottom of a glass or a potato masher, gently smash each potato to flatten it slightly.
5. Drizzle the potatoes with olive oil and season with salt and pepper.
6. Bake in the preheated oven for 20-25 minutes, or until the potatoes are crispy and golden brown.
