Marinade the chicken and potatoes in the above ‘Chicken Ingredients’ (not the sauce ingredients) and marinade for at least an hour.
Place on a baking tray lined with baking paper, and add a drizzle of olive oil. Ensure there is enough space in between for the chicken and potatoes to roast evenly.
Roast on 180 degrees for 1 hour.
Just before the hour of roasting is done, heat the sauce ingredients on a stove top until it boils.
Transfer the chicken to a deep dish, cover with the sauce and top with the roast potatoes, lemon wedges, and freshly chopped parsely.
Serve with garlic roll, salad, or your favourite sides.
