2 cups of regular flour
1/4 cup of sugar
1 tablespoon of baking powder
1/2 teaspoon of salt
1/2 teaspoon of cinnamon powder
2 big eggs
3/4 of a cup of whole milk
1 teaspoon of vanilla flavoring
4 ripe peaches, with skin and pit removed, cut into small pieces.
Oil for frying vegetables
Powdered sugar to sprinkle on top.
Instructions
In a big bowl, mix the flour, sugar, baking powder, salt, and cinnamon.
In a different bowl, whisk the eggs, then pour in the milk and vanilla extract, stirring until everything is mixed well.
Slowly mix the wet ingredients into the dry ones, stirring until they are well combined. Be cautious not to mix too much.
4. Carefully mix in the chopped peaches until they are spread evenly.
In a large frying pan or pot, warm up the vegetable oil on medium-high heat until it reaches 375°F (190°C).
Carefully place small amounts of the batter into the hot oil and fry a few at a time. Don’t put too much in the pan.
Cook the fritters in hot oil for 2-3 minutes on each side until they are golden brown and fully cooked.
8. With a spoon with holes, move the fritters to a plate lined with paper towels to remove extra oil.
After frying all the fritters and letting them cool a bit, sprinkle powdered sugar on top before serving.
Different Types and Advice
For a fun variation, consider adding some blueberries or raspberries to the batter to make a mixed fruit fritter. You can also try using different spices like nutmeg or cardamom to make the taste better. If you want a lighter fritter, use half whole wheat flour and half regular flour. To make a gluten-free version, use an equal amount of gluten-free baking flour blend.
