Lemon Orzo

1 cup orzo pasta (whole wheat or gluten-free, if preferred)
1 tablespoon olive oil
2 cloves garlic, minced
Zest of 1 lemon
Juice of 2 lemons
1/2 cup cherry tomatoes, halved
1/4 cup fresh parsley, chopped
Salt and pepper to taste
Optional: Vegan feta or nutritional yeast for topping
