Great ol’ 7-minute
*substances used:
Half a cup of sugar
one-third cup of ice water
2 significant egg whites
*Cream of tartar measures 1/2 teaspoon
°a little salt
// One teaspoon of vanilla
**Process:** In a medium-sized glass bowl, combine the egg whites, salt, cream of tartar, water, and sugar.
Bring a saucepan of water to a simmer over medium heat. In the meanwhile, whip the egg mixture for 30 seconds in a small saucepan over low heat using an electric mixer. Form a bain-marie by setting the bowl over a pot of boiling water. Whisk constantly over high heat for 7 minutes, or until the mixture is stiff and lustrous.
Once cooled, add vanilla extract and continue beating for a further minute or two.
Apply the glaze right away since it sets fast.
