Ingredients:
150g soaked cashews (soak 100g dry cashews overnight or in boiling water for 30 minutes if short on time)
90g coconut paste
70g coconut cream (use the firm part scooped from the top of a can of coconut milk)
20ml coconut milk (use the liquid part from the can)
40g syrup or honey (use maple syrup or agave to keep it vegan)
1 tsp lemon juice
A pinch of salt
80g dark chocolate (sugar-free, to stay in line with the diet-friendly theme)
50ml coconut milk (for the chocolate)
