Old fashioned 7 Minute

The 7-minute freeze—what is it?
The essential ingredient for Seven Minute Frosting, often called Boiled Frosting, is Swiss meringue. While sugar and egg whites are cooking, mix them together. The amount of time required to cook or whisk this frosting—seven minutes—is the reason for its name.

Using a hand mixer, whisk the meringues in a double boiler according to the conventional procedure. Because I find it to be too “hands-on” in the process, I substitute creating meringues for the Swiss meringue buttercream.
